Fajita Veggie Mix (10 oz)

Roasted

Preheat oven to 400º F. On a foil-lined baking sheet, toss the fajita mix with 2 tablespoons of olive oil and a liberal dose of salt and pepper. Cook until JUST tender (about 15 minutes).

Grilled

Rub a grill pan with olive oil and heat to medium-high heat. Add fajita mix and liberally salt and pepper. Cook for 5 minutes and turn over. Cook for an additional 5 minutes. While the peppers are grilling, make a topping sauce by combining 1 cup of your favorite plain yogurt with the zest and juice of 1 lime. Serve peppers with sauce spooned over.

Sautéed

In a medium skillet over medium-high heat, add 1 tablespoon of olive oil, the fajita mix, 3 minced garlic cloves, ¼ teaspoon chili powder, salt, and pepper. Sauté until the onions begin to soften and the peppers are tender (about 10 minutes). Squeeze lime juice over and serve.

Bell peppers are an excellent source of fiber, vitamin C and numerous healthful antioxidants called carotenoids, including beta-carotene. Red bell peppers provide the greatest antioxidant punch!
