Ultimate Vegetable-Tofu Tacos - Step 1

1. Prepare Tofu: Place tofu on a paper towel-lined cutting board and cover with paper towels. Place a heavy saucepan or skillet on top of tofu, and place several cans or other heavy objects inside. Let stand 10 minutes to release excess moisture.

2. Prepare Toppings: Pit and dice avocado. Toss with ONLY ½ teaspoon cumin and ¼ teaspoon salt. Stir together pico de gallo and corn.

3. Prepare Tofu: Cut tofu into 1-inch cubes.

4. Cook Tofu: Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add ONLY ½ teaspoon sriracha,garlic, ONLY 1 teaspoon chili powder, ONLY 1 teaspoon cumin, and ¼ tea-spoon salt. Sauté 2 minutes or until fragrant. Add tofu; sauté 6 minutes or until browned and crispy.

5. Char Tortillas: Heat tortillas by placing directly over a gas burner or under a broiler until blackened in places on both sides. PLEASE don’t skip this step; you’ll be missing out on big flavor.

To Serve: Divide tofu evenly among tortillas. Top with avocado and corn salsa.

Pro Tip:

Crumble tofu instead of pressing and cubing it for a vegetarian-friendly “ground meat” version.
