What To Do:
1. Cook Rice: In a medium saucepan over high heat, bring 2½ cups water and ½ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let stand, covered, for 5 minutes. Fluff with a fork.
2. Cook Turkey: While rice is cooking, start turkey mixture. In a sauté pan over medium heat, add 1 teaspoon oil. Add turkey, ½ teaspoon salt, and ¼ teaspoon pepper. Cook, breaking up turkey with a wooden spoon, until cooked through.
3. Finish Turkey: Stir black beans, pico de gallo, sriracha, and ONLY ¾ teaspoon cumin into turkey, and cook 2 minutes. Cover with aluminum foil and set aside to keep hot.
