What To Do:
1. Preheat oven to broil. Line a baking tray with foil and coat with a non-stick cooking spray. Set aside.
2. Prep Vegetables:
Chop parsley fine. Chop onion. Chop carrots.
3. Mix Meatballs:
In a medium mixing bowl, use your hands to mix together the turkey, ½ of the Parmesan cheese, 2 tablespoons parsley, ¼ teaspoon oregano, ½ teaspoon salt and ¼ teaspoon pepper.
4. Shape Meatballs: Scoop out mixture by the heaping tablespoon, shape into balls (yields 12) and place on the prepared baking sheet 2-inches apart. Brush meatballs lightly with oil.
