What To Do:

1. Preheat oven to broil. Line a baking tray with foil and coat with a non-stick cooking spray. Set aside.

2. Prep Vegetables: Chop parsley fine. Chop onion. Chop carrots.

3. Mix Meatballs: In a medium mixing bowl, use your hands to mix together the turkey, ½ of the Parmesan cheese, 2 tablespoons parsley, ¼ teaspoon oregano, ½ teaspoon salt and ¼ teaspoon pepper.

4. Shape Meatballs: Scoop out mixture by the heaping tablespoon, shape into balls (yields 12) and place on the prepared baking sheet 2-inches apart. Brush meatballs lightly with oil.

5. Cook Meatballs: Broil meatballs, turning as needed, until browned all over and cooked through (about 8 minutes).

6. Make Stock: In a large liquid measuring cup, whisk together stock paste and 3¾ cups very hot water until concentrate just dissolves.

7. Cook Soup: Heat 1 tablespoon olive oil in a large saucepan over medium-high heat. Add the onion and carrot; sauté 2 minutes or until onion is tender. Add stock; bring to a boil. Add orzo. Cook 4 minutes; add kale and meatballs. Simmer 3 minutes or until orzo is al dente and kale is tender.

To Serve: Ladle soup into 2 bowls. Garnish with remaining Parmesan and parsley.
