What To Do:
1. Preheat oven to 350°F.
2. Cook the Chicken: Liberally salt and
pepper the chicken. In a medium ovenproof
sauté pan over medium-high heat,
add 1 teaspoon olive oil. Add chicken and
cook until browned on the under side.
Turn chicken and place pan in the oven
to cook until juices run clear (about 12
minutes). Remove from oven and set aside.
3. Make the Dressing: Seperate the jalapeño from the cilantro. Set cilantro aside. Finely chop the jalepeño and shallots and add to a medium mixing bowl. (If you like less heat, use less jalapeño.) Add the strawberry preserves, vinegar, 2 teaspoons olive oil and 2 teaspoons water.
Whisk together with a fork. Salt and pepper to taste. Set aside.
