What To Do:

1. Ground beef may arrive slightly frozen. Thaw as needed.

2. Cook Rice: In a medium saucepan over high heat, bring 2½ cups water and ½ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let stand covered for 5 minutes.

3. Prep Ingredients: Chop fajita vegetables. Chop cilantro. Slice avocados.

4. Brown Beef: Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add ground beef, garlic, chili powder, cumin, oregano and ½ teaspoon each salt and pepper. Cook 5 minutes or until beef is browned. Remove from skillet.

5. Cook Vegetables: Heat 2 teaspoons olive oil in skillet. Add chopped fajita vegetables. Sauté 4 minutes or until tender.

6. Finish Fried Rice: Stir rice into cooked vegetables. Cook 2 minutes or until rice begins to brown. Stir in beef, corn, salsa and cilantro. Cook 2 minutes longer or until mixture is thoroughly heated. Stir in lime juice and season with salt and pepper to taste.

To Serve: Divide rice evenly among 4 serving plates or bowls. Top evenly with avocado.

Stir in a scrambled egg or two for authentic fried rice flavor.
