Grenache is a lush, spicy red that can handle the meat and sweet potatoes, but also be bright enough for the ginger.

What To Do:

1. Cook Sweet Potatoes: In a medium saucepan, over medium-high heat add potatoes and cover with water. Add 1 teaspoon of salt. Boil potatoes until easily pierced with a fork, about 13 minutes. Drain. Cover and set aside.

2. Cook The Filling (while the sweet potatoes are boiling). In a medium skillet over medium heat, add the ground chuck ¼ teaspoon salt and ¼ teaspoon pepper. Cook until meat is just done but not fully browned. Stir in scallions, mushrooms, soy sauce, ½ the ginger (add the remaining ginger to your morning tea) and ½ cup water. Cover, reduce heat and let simmer for 5 minutes.

3. Preheat broiler to high.

4. Mash Sweet Potatoes. Add honey and 1 tablespoon water to the sweet potatoes. Mash until fluffy. Salt and pepper to taste.

5. Spread sweet potatoes over the top of the ground beef mixture and place under the broiler for 2 minutes (the potatoes won’t brown, just “crisp” a bit).

To Serve: Right from the skillet!

Pro Tip:

Serve the cutest individual casseroles! Divide meat mixture between small oven-proof casserole dishes or small cast iron skillets, top with mashed sweet potatoes and broil.
