What To Do:
1. Cook Sweet Potatoes: In a medium
saucepan, over medium-high heat add
potatoes and cover with water. Add 1
teaspoon of salt. Boil potatoes until easily
pierced with a fork, about 13 minutes.
Drain. Cover and set aside.
2. Cook The Filling (while the sweet
potatoes are boiling). In a medium skillet
over medium heat, add the ground
chuck ¼ teaspoon salt and ¼ teaspoon
pepper. Cook until meat is just done
but not fully browned. Stir in scallions,
mushrooms, soy sauce, ½ the ginger (add
the remaining ginger to your morning
tea) and ½ cup water. Cover, reduce heat
and let simmer for 5 minutes.
3. Preheat broiler to high.
