1. Cook Rice:In a medium saucepan over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in jasmine rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let stand, covered, for 5 minutes.

2. Prep Ingredients:Slice avocado. Coarsely chop cilantro.

3. Crumble tofu.

4. Cook Sofritas:Heat 1 tablespoon oil in a large skillet over medium-high heat. Add onion, garlic, ONLY 1 teaspoon sriracha, ONLY ½ teaspoon oregano, ONLY 1 teaspoon cumin, ONLY 1 teaspoon chili powder, and ½ teaspoon each salt and pepper. Sauté 3 minutes or until onion is tender. Stir in crumbled tofu, black beans, and salsa. Simmer 10 minutes or until thickened.

To Serve: Divide rice between serving bowls. Top with sofritas and serve with avocado and cilantro.
