Season steaks liberally with salt and
pepper or marinate using your favorite
marinade. Heat a lightly oiled grill pan or
grill to high. Add steaks to grill and cook
to medium rare, turning once (about 3-4
minutes per side). Remove to a plate and
allow to rest for 5 minutes before slicing
against the grain.
Rub steak with 1 tablespoon softened
butter or oil, salt, pepper and any of your
favorite seasonings. Heat a cast iron
skillet to hot. Place steak in pan and let
sear for 2-3 minutes until browned. Turn
and cook for an additional 3 minutes on
the other side. Remove from heat and
allow to rest (in the pan) for 5 minutes.
Marinate your skirt steak for a minimum
of 1 hour in your favorite marinade. Heat
oven to broil. Place oven rack close to
the broiler. Line a baking tray with foil
and lightly oil. Put steaks on the baking
tray and place under the broiler. Cook for
4-6 minutes, turn, and broil for another
(sliced or chopped) Add to vegetables, stir-fry, pasta or salads. Also great as a sandwich or steak taco!
