What To Do:

1. Preheat oven to 450°F. Line a large rimmed baking sheet with aluminum foil and coat with cooking spray.

2. Bake Sweet Potato Fries:Toss sweet potato spears, 1 tablespoon olive oil, and ½ teaspoon each salt and pepper on prepared baking sheet. Bake 15 minutes.

3. Make Coleslaw: In a medium bowl, stir together ONLY 2 teaspoons mayonnaise, ONLY 1 tablespoon sour cream, honey, and ONLY ½ tablespoon vinegar. Add shredded purple cabbage and carrot and green cabbage and stir to coat. Season with salt and pepper to taste. Set aside.

4. Bake Fish:Melt butter and place in a shallow dish. Place panko in a separate shallow dish. Dip fish in butter and then pat in panko. Place alongside sweet potato fries on baking sheet. Sprinkle fish with ¼ teaspoon each salt and pepper. Bake 7 to 8 minutes or until fish flakes and is golden brown. Season with salt and pepper to taste.

5. Make Creamy Caper Sauce: In a small bowl, stir together remaining 4 teaspoons mayonnaise, remaining sour cream, remaining vinegar, capers, and salt and pepper to taste.

To Serve: Divide fish, sweet potato fries, and coleslaw evenly between two serving plates. Serve with sauce.

Pro Tip:

For extra crispy fish and fries, increase the oven temperature to broil during the last 3 minutes of baking.
