What To Do:

1. Chicken may arrive slightly frozen. Thaw as needed.

2. Cook Pasta: In a medium sauce pan over medium-high heat, add water and 2 teaspoons salt. Bring to a boil. Stir in penne and boil, stirring occasionally, until al dente (about 10 minutes). Drain pasta, reserving ¼ cup pasta water.

3. Cook Chicken: While pasta is cooking, start chicken. Heat 1½ teaspoons olive oil in a large nonstick skillet over medium-high heat. Season chicken liberally with salt and pepper. Add chicken to hot skillet and cook 4-6 minutes on each side or until done. Remove to a board to rest while preparing sauce.

4. Make Sauce: Halve and pit the avocado. Scoop out flesh into a blender or food processor. Squeeze juice from lemon to equal 2 tablespoons (use any remaining juice to freshen your cutting boards). Add to blender with all but a few leaves of basil (save for garnish), Parmesan, garlic, 2 tablespoons olive oil, 2 tablespoons water and ¼ teaspoon each salt and pepper. Process until smooth and creamy.

5. Finish Pasta: Toss the pasta with the avocado sauce and enough pasta water to reach desired consistency.

To Serve: Divide pasta between 2 bowls. Slice chicken and serve atop pasta. Garnish with reserved basil.

Pro Tip:

To prevent your pasta water from boiling over, lay a wooden spoon across the top of the pot while cooking.
