What To Do:
1. Chicken may arrive slightly frozen. Thaw as needed.
2. Cook Pasta: In a medium sauce pan over medium-high heat, add water and 2 teaspoons salt. Bring to a boil. Stir in penne and boil, stirring occasionally, until al dente (about 10 minutes). Drain pasta, reserving ¼ cup pasta water.
3. Cook Chicken: While pasta is cooking, start chicken. Heat 1½ teaspoons olive oil in a large nonstick skillet over medium-high heat. Season chicken liberally with salt and pepper. Add chicken to hot skillet and cook 4-6 minutes on each side or until done. Remove to a board to rest while preparing sauce.
