Wine Pairings by @grapefriend

A Pinot Noir-based rosé will complement the pork but also hold up to the chipotle spice.

Beer Pairings

We like a Belgian Witbier with this dish. The sweetness helps ease the fire of the pepper.

TK Table Talk:

What’s your favorite song to dance to?

What To Do:

1. Pork may arrive slightly frozen. Thaw as needed.

Quick Chipotle Pork Tacos - Step 1

2. Make Dry Rub and Season Pork: In a small bowl, stir together ONLY ½ of the cumin, 1 teaspoon salt and ½ teaspoon pepper. Massage rub into pork. Cut pork into 1-inch slices (medallions).

Quick Chipotle Pork Tacos - Step 2

3. Cook Pork: In a medium sauté pan over medium-high heat, add 1 tablespoon olive oil. When oil shimmers, add pork medallions. Cook, turning once, JUST until browned on each side and cooked through (about 6-8 minutes).

Quick Chipotle Pork Tacos - Step 3

4. Chop Pork: Remove pork to a cutting board. Allow to rest for 3 minutes and chop.

Quick Chipotle Pork Tacos - Step 4

5. Finish Pork: Add chopped pork back to the pan over low heat and stir in chipotle salsa. Sprinkle mixture with cheese and cook JUST until heated through and cheese has melted.

Quick Chipotle Pork Tacos - Step 5

6. Char Tortillas: Heat tortillas by placing directly over a gas burner or under a broiler until blackened in places on both sides. PLEASE don’t skip this step, you’ll be missing out on big flavor.

To Serve: Divide chopped chipotle pork between tortillas and top each with pico de gallo.

Sure, our TK food containers are recyclable, but we’d rather you upcycle them first. We’re partial to using them to sprout our garden seeds, but we’d love to see how creative you are! Tag us in your photos with @terraskitchen and #terraskitchen.
