What To Do:
1. Pork may arrive slightly frozen. Thaw as needed.
2. Make Dry Rub and Season Pork: In a small bowl, stir together ONLY ½ of the cumin, 1 teaspoon salt and ½ teaspoon pepper. Massage rub into pork. Cut pork into 1-inch slices (medallions).
3. Cook Pork: In a medium sauté pan over medium-high heat, add 1 tablespoon olive oil. When oil shimmers, add pork medallions. Cook, turning once, JUST until browned on each side and cooked through (about 6-8 minutes).
