What To Do:

1. Pork may arrive slightly frozen. Thaw as needed.

2. Make Dry Rub and Season Pork: In a small bowl, stir together cumin, 2 teaspoons salt and 1 teaspoon pepper. Massage rub into pork. Cut pork into 1-inch slices (medallions).

3. Cook Pork: In a medium sauté pan over medium-high heat, add 2 tablespoons olive oil. When oilshimmers, add pork medallions. Cook, turning once, JUST until browned on each side and cooked through (about 6-8 minutes).

4. Chopping Pork: Remove pork to a cutting board. Allow to rest for 3 minutes and chop.

5. Finish Pork: Add chopped porkback to the pan over low heat and stir in chipotle salsa. Sprinkle mixture with cheese and cook JUST until heated through and cheese has melted.

6. Char Tortillas: Heat tortillas by placing directly over a gas burner or under a broiler until blackened in places on both sides. PLEASE don’t skip this step, you’ll be missing outon big flavor.

To Serve: Divide chopped chipotle pork between tortillas and top each with pico de gallo.
