1. Cook rice: In a medium saucepan, over high heat, bring 2½ cups water and ½ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 25 minutes or until liquid is absorbed.

2. Make glaze: Set ¼ of watermelon aside and chop. Puree remaining watermelon in a blender or food processor. Place in a small saucepan with strawberry preserves, lime juice, and soy sauce. Bring to a boil. Boil 8 minutes or until slightly syrupy. Set aside half of glaze.

3. Cook broccoli: Preheat oven to 400°F. Line a baking tray with aluminum foil and coat with cooking spray. Place broccoli on tray and toss with 1 tablespoon olive oil, ginger, and ¼ teaspoon each salt and pepper. Bake 12 minutes or until broccoli is tender.

4. Grill chicken: Heat an oiled grill or grill pan over medium-high heat. Sprinkle chicken thighs with ½ teaspoon each salt and pepper. Place on grill. Drizzle with half of reserved glaze, and grill 3 to 4 minutes. Turn, spoon with remaining reserved glaze and grill 3 to 4 more minutes or until done.

To Serve: Divide rice, chicken, and broccoli between 4 serving plates. Drizzle chicken with reserved glaze, and top with chopped watermelon.
