What To Do:
1. Cook Rice: In a medium saucepan over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 25 minutes or until liquid is absorbed. Turn off heat and let stand, covered, for 5 minutes.
2. Make Strawberry-Cucumber Salad: Dice strawberries, cucumber, and avocado. Coarsely chop jalapeño and cilantro. In a medium bowl, stir together strawberries, cucumber, avocado, jalapeño, and half of cilantro. Gently stir in ONLY 1 tablespoon lime juice,
1 tablespoon olive oil, and salt and pepper to taste.
