What To Do:

Vegetable Minestrone (Family) - Step 1

1. Start Sautéing Vegetables: Heat 2 tablespoons oil in a Dutch oven over medium-high heat. Add roasting vegetables and sauté 5 minutes or until beginning to soften.

2. While Vegetables Cook, Make Broth: Stir together 6 cups very warm water and vegetable stock concentrate.

3. Start Soup: Add broth, crushed tomatoes, and ½ teaspoon each salt and pepper to vegetables. Bring to a boil and cook 5 minutes. Add pasta to soup. Simmer 10 minutes or until pasta is tender.

4. Finish Soup: Stir in beans and spinach, and stir until spinach wilts. Season with salt and pepper to taste.

To Serve: Divide soup evenly between 4 serving bowls. Sprinkle with Parmesan cheese and serve immediately.

If you want to make this soup ahead, cook the pasta separately and add it after reheating.
