We like an American Pale Ale with this lightly spiced “taco-ish” dish. The hop bitterness will accentuate the seasoning without becoming overwhelming and citrusy hop flavoring will add a touch of sweetness.

What To Do:

1. Ground turkey may arrive slightly frozen. Thaw as needed.

2. Bake Pizza Crusts: Preheat oven to 400°F. Place cauliflower pizza crusts on vented pizza pans, pizza screens or baking trays lined with parchment paper and bake for 12 minutes. Remove from oven and allow to rest for 10 to 12 minutes (don’t skip this step as it makes the crust crispier). TURN OVEN TO BROIL SETTING.

3. Cook Turkey: While pizza crusts are baking, add 2 teaspoons oil to a medium sauté pan over medium-high heat. Add turkey and 1 teaspoon each salt and pepper. Cook (breaking apart with a wooden spoon) until turkey is cooked through and beginning to brown. Reduce heat to low and stir in chipotle salsa.

4. Broil Pizzas: Divide turkey mixture evenly between crusts and top with cheese. Return pans to oven and broil until cheese is melted (about 2 minutes).

5. Finish Pizzas: Top hot pizzas with pico de gallo.

To Serve: Slice pizzas if you like or serve whole and let each person cut their own.

Pro Tip:

Skip a step! Add the pico de gallo to the sauté pan while cooking the turkey. It will be a bit more flavorful and slightly faster (it just won’t be as pretty).
