What To Do:
1. Turkey may arrive slightly frozen. Thaw as needed.
2. Cook Rice: In a small saucepan over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let sit, covered, for 5 minutes. Fluff with a fork.
3. Cook Turkey: While rice is cooking, start turkey mixture. In a sauté pan over medium heat, add 1 teaspoon oil. Add turkey, ½ teaspoon salt and ¼ teaspoon pepper. Cook, breaking up the turkey with the wooden spoon, until cooked through.
4. Finish Turkey:Stir black beans, pico de gallo and hot sauce (optional) into the turkey and cook for 2 minutes. Cover with foil and set aside to keep hot.
