What To Do:

1. Shrimp may arrive slightly frozen. Thaw as needed.

2. Prep Ingredients: Coarsely chop cilantro. Grate zest from lime. Squeeze juice from one half and cut other half into wedges. Slice avocado.

3. Make Slaw: Stir together ONLY half of cilantro, lime zest, lime juice, sour cream, mayonnaise and ¼ teaspoon each salt and pepper in a medium bowl. Add cabbage, and toss to coat. Set aside.

4. Cook Shrimp: Heat 1 tablespoon canola oil in a large skillet over medium-high heat. Add shrimp and season with ¼ teaspoon each salt and pepper. Sauté 3 minutes or until almost done. Add sweet chile sauce and cook 1 minute or until shrimp is done and sauce is thickened.

5. Char Tortillas: Heat tortillas by placing directly over a gas burner or under a broiler until blackened in places on both sides. PLEASE don’t skip this step, you’ll be missing out on big flavor.

To Serve: Divide shrimp and pan sauce evenly between the tortillas. Top with slaw, remaining cilantro and avocado slices. Serve with lime wedges.

Pro Tip:

Make the slaw up to 2 hours ahead of time.
