What To Do:
1. Prep Ingredients: Preheat oven to
425°F. Line a large rimmed baking
sheet with aluminum foil, and coat
with cooking spray. Cut potatoes into
quarters, and place in a medium bowl
with fajita vegetables.
2. Grate zest from lemon, and add to
vegetable mixture in bowl. Stir in garlic,
oregano, and 2 tablespoons olive oil. Cut
lemon into quarters.
