Wine Pairings by @grapefriend

Barbera, a lighter red that’s low in tannins but high in acidity, is a perfect match for tomato-based dishes.

Beer Pairings

A Saison is a great choice to match the acidity of the tomatoes and balsamic vinaigrette.

TK Table Talk:

If each state in the USA had a state food (like a state bird) what would they be?

What To Do:

1. Chicken may arrive slightly frozen. Thaw as needed.

One-Pan Chicken Parmesan - Step 1

2. Bread Chicken: Preheat oven to 425°F. Melt butter. Sprinkle chicken with salt and pepper. Dredge chicken in butter and then in panko, pressing to adhere.

One-Pan Chicken Parmesan - Step 2

3. Brown Chicken: Heat 1 tablespoon olive oil in a cast-iron skillet. Brown chicken 2 to 3 minutes on each side.

One-Pan Chicken Parmesan - Step 3

4. Finish Chicken: Season crushed tomatoes with ¼ teaspoon each salt and pepper. Spoon crushed tomatoes onto chicken. Top with basil leaves (reserve a few for garnish) and sprinkle with cheese. Bake 10 minutes or until chicken is done.

One-Pan Chicken Parmesan - Step 4

5. Make Arugula Salad: While chicken bakes, whisk together vinegar and 2 tablespoons olive oil in a medium serving bowl. Season with salt and pepper to taste. Add arugula and toss to coat.

To Serve: Divide chicken and salad evenly between serving plates. Top chicken with reserved basil leaves.

Pro Tip:

Dress the arugula just before serving.

Spice it Up!: Add a pinch of sugar and crushed red pepper to the crushed tomatoes to balance out the acidity of the tomatoes.
