Wine Pairings by @grapefriend

A dry, citrusy Riesling from Clare Valley in Australia will be as zesty as the ginger in this dish.

Beer Pairings

A citrusy Session IPA with a low ABV will have just the right amount of hoppy acidity and undertones of herbs and lemon.

TK Table Talk:

If a song could play every time you entered a room, what would it be?

What To Do:

1. Cod may arrive slightly frozen. Thaw as needed.

2. Preheat oven 450°F. Line a baking sheet with alumnium foil and set aside.

Ginger-Lemon Cod and Roasted Broccoli - Step 1

3. Prep Ingredients: Thinly slice lemon into rounds, coarsely chop parsley and break any large pieces of broccoli into smaller pieces.

Ginger-Lemon Cod and Roasted Broccoli - Step 2

4. Roast Broccoli: Arrange broccoli in a single layer on prepared baking sheet. Toss with 1 tablespoon olive oil and ½ teaspoon each salt and pepper. Bake 15 minutes or until broccoli is browned and tender.

Ginger-Lemon Cod and Roasted Broccoli - Step 3

5. Make Seasoning Mixture: While broccoli roasts, toss together 1 tablespoon olive oil, ginger, garlic, lemon slices and ½ teaspoon salt in a small bowl. Combine ONLY 2 teaspoons vinegar and 3 tablespoons water in a separate bowl.

Ginger-Lemon Cod and Roasted Broccoli - Step 4

6. Start Cod: Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Generously season cod with salt and pepper. Once the oil is smoking, add the fish and sear 3 minutes on one side. Turn fish over, move to one side of the pan and add lemon mixture to the pan. Cook 2 more minutes or until lemon slices begin to brown.

7. Finish Cod: Add vinegar mixture and parsley to pan (reserve 2 large pinches of parsley for garnish). Spoon pan sauce over fish to finish cooking. Remove fish and lemon slices and any bits from skillet. Wipe pan out with paper towel. Add rice and broccoli to the pan and stir until heated through.

To Serve: Divide rice mixture, fish and lemon slices between serving plates and garnish with reserved parsley.

Pro Tip:

Protect your pan! Use a nonstick spatula to turn the fish in the nonstick skillet.
