What To Do:

1. Ground Turkey may arrive slightly frozen. Thaw as needed.

2. Line a baking sheet with aluminum foil and coat with nonstick cooking spray.

3. Sauté Spinach: Roughly chop the spinach. Heat 1 teaspoon olive oil in a medium sauté pan over medium heat. Add chopped spinach, ONLY half of the garlic, ¼ teaspoon salt and a pinch of black pepper. Cook, stirring, just until spinach has wilted. Transfer to a medium mixing bowl. Set sauté pan aside.

4. Preheat broiler.

5. Mix Meatballs: Add the turkey, ONLY half of the Parmesan cheese, ¼ teaspoon salt and heavy pinch of black pepper to the spinach mixture and mix using your hands. Scoop out by heaping tablespoons and shape into 12 balls. Place on prepared baking sheet 2 inches apart. Brush meatball slightly with oil.

6. Cook Meatballs: Broil meatballs, turning as needed, until browned all over and cooked through (about 12 minutes).

7. Make Tomato Sauce: Combine ¼ cup olive oil, tomatoes, tomato paste, all but 2 pinches of parsley(save for garnish), ¼ teaspoon salt and a pinch of black pepper in a blender.Pulse just until blended but still chunky. Pour into the sauté pan. Stir in remaining garlic, ONLY ¼ teaspoon oregano(save the rest for another use), ONLY ¼ teaspoon crushed red pepper, ¼ teaspoon salt, a pinch of black pepper and 2 tablespoons water. Bring to a boil over medium heat.Reduce heat to low and simmer.

8. Finish Dish: Add meatballs and pasta to the sauce. Stir to coat and simmer for 3 minutes.

To Serve: Divide pasta, meatballs and sauce between serving bowls or plates. Sprinkle with remaining parsley and cheese.

Prevent rubbery meatballs by not overworking the meat mixture
