What To Do:

1. Chicken may arrive slightly frozen. Thaw as needed.

2. Cook Rice: In a medium saucepan over high heat, bring 2½ cups water and ½ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let stand, covered, for 5 minutes.

3. Prep Baking Sheet: Line a baking sheet with aluminum foil. Place the baking sheet in the oven and preheat to 450°F. Once the oven is pre-heated, remove baking sheet and spray with cooking spray.

4. Bake Chicken: While oven preheats, melt butter in a shallow dish and stir in 2 packets of sriracha. Place Panko in a separate shallow dish. Dip chicken in butter mixture and then dredge in Panko, pressing to coat. Place chicken on hot baking sheet and sprinkle with ½ teaspoon salt. Bake 10 minutes or until chicken is done and breading is browned.

5. Make Sauce: In a small bowl, stir together mayonnaise, honey and remaining 2 packets of sriracha.

6. Finish Rice: Break apart any large broccoli pieces. Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add broccoli and ⅓ cup water. Cover and steam 3 minutes. Uncover and cook 1 minute longer or until liquid evaporates and broccoli is tender. Stir in rice and soy sauce. Sauté 1 minute. Salt and pepper to taste.

To Serve: Divide rice and chicken evenly between serving plates or bowls. Drizzle chicken with sauce and sprinkle dish with scallions.
