Wine Pairings by @grapefriend

For a dish that has a mix of powerful flavors, the blend of grapes in a Côtes du Rhône provides equally earthy, black cherry notes.

Beer Pairings

Complement the earthiness of the quinoa and the salty richness of bacon and blue cheese with a Wheat Beer.

TK Table Talk:

What three questions should partners ask each other before getting married?

What To Do:

1. Bacon may arrive slightly frozen. Thaw as needed.

2. Cook Quinoa: Place quinoa in a fine-mesh strainer. Rinse under cold water for a solid minute, swishing quinoa with your hand while rinsing. Drain. (If you don’t have a fine mesh strainer, you can skip this step.) In a medium saucepan, over medium-high heat, add 2 teaspoons oil and drained quinoa. Cook, stirring, for 1 minute. Add 1 cup water and ¼ teaspoon salt to pan. Bring to a rolling boil. Reduce heat to low and cook, covered, for 15 minutes. Remove pan from heat and let stand, COVERED, 5 minutes. Fluff quinoa gently with a fork.

3. Halve grapes. Chop bacon.

4. Cook Bacon and Onion: Heat 1 tablespoon oil in a large sauté pan over medium-high heat. Add bacon, onion and ½ teaspoon pepper. Cook, stirring, until bacon is almost crisp and onion is soft (about 6 minutes).

6. Finish Dish: Add spinach, quinoa and cilantro to bacon mixture. Cook, stirring, until spinach is wilted. Season with salt and pepper to taste.

To Serve: Divide mixture between two bowls and top with cheese.

Pro Tip:

Quinoa can be made 2 days ahead and kept refrigerated.

Spice it Up!: Like it garlicky? Add a minced clove of garlic in with the grapes.
