What To Do:

1. Bacon may arrive slightly frozen. Thaw as needed.

2. Cook Bacon: Chop bacon. Cook bacon in a medium saucepan until crisp, reserving drippings in pan. Transfer bacon to drain on paper towels.

3. Make Sauce: Cook butternut squash in bacon drippings with 1 cup water and ONLY 1 tablespoon thyme leaves until tender. Purée in a blender until creamy.

4. Cook Pasta: Cook pasta in a large saucepan of salted water 8 minutes or al dente. Drain, reserving ¼ cup pasta water.

5. Finish Pasta: Combine pasta, butternut squash sauce, bacon, Parmesan cheese and reserved pasta water in a serving bowl.

To Serve: Divide pasta evenly between 2 serving bowls or plates. Garnish with desired amount of remaining thyme.

Save time and use an immersion blender to purée the butternut squash sauce.
