What To Do:
1. Prep the Toppings:
In a small bowl, stir together the sour cream and half of the salsa. Set aside. Chop the cilantro.
2. Start the Meat Mixture: In a medium skillet over medium-low heat, add
½ teaspoon olive oil and the garlic. Cook, stirring, for 30 seconds. Add the ground buffalo, ONLY ½ teaspoon chili powder (See Pro Tip for using the remainder in a fun dessert), ½ teaspoon salt and ¼ teaspoon pepper. Cook, breaking the meat up with a wooden spoon, until meat is cooked through.
