Fajitas were introduced in the U.S. by Mexican ranch hands working in West Texas (along the Rio Grande River) in the 1930s. If you could only order one Mexican dish forever…what would it be?

What To Do:

1. Ground beef may arrive slightly frozen. Thaw as needed.

2. Cook Rice: In a small pot add 1¼ cups water and a liberal sprinkle of salt. Bring to a boil and add rice. Bring rice back to a boil and reduce heat to low. Cover and cook for 15 minutes. Turn heat off and let the rice sit for 5 minutes. Fluff with a fork.

3. Cook Ground Beef: In a large skillet over medium heat, add 1 tablespoon oil, ground beef, 1 teaspoon salt, ½ teaspoon pepper and ONLY half the chili powder. Cook, breaking beef apart, until JUST HALFWAY cooked through (about 3 minutes).

4. Add Fajita Mix: Add in the fajita mix and cook, stirring often, until onions and peppers are tender (about 5 minutes). Roughly chop cilantro (stems and all between stirring.

5. Add Rice: Reduce heat to low and stir in rice, crushed tomatoes, remaining chili powder and ONLY half of the cilantro. Cook, stirring just once, until heated through (about 3 minutes). Salt and pepper to taste.

6. Finish Dish: Sprinkle cheese over dish and cover JUST until cheese has melted. Remove from heat.

To Serve: Top with remaining cilantro and serve straight from the skillet!

Pro Tip:

Serve with a side of charred tortillas or spoon over corn chips or tortilla chips for a fun nostalgic crunch!

Spice it Up!: If you have the spice at home, use it! We love ½ teaspoon of ground cumin added to the ground beef and an ever so slight pinch of cinnamon added with the tomato sauce.
