What To Do:
1. Ground beef may arrive slightly frozen. Thaw as needed.
2. Cook Rice: In a small pot add 1¼ cups water and a liberal sprinkle of salt. Bring to a boil and add rice. Bring rice back to a boil and reduce heat to low. Cover and cook for 15 minutes. Turn heat off and let the rice sit for 5 minutes. Fluff with a fork.
3. Cook Ground Beef: In a large skillet over medium heat, add 1 tablespoon oil, ground beef, 1 teaspoon salt, ½ teaspoon pepper and ONLY half the chili powder. Cook, breaking beef apart, until JUST HALFWAY cooked through (about 3 minutes).
4. Add Fajita Mix: Add in the fajita mix and cook, stirring often, until onions and peppers are tender (about 5 minutes). Roughly chop cilantro (stems and all between stirring.
