What To Do:

1. Chicken may arrive slightly frozen. Thaw as needed.

2. Bread Chicken: Preheat oven to 425°F. Melt butter. Sprinkle chicken with salt and pepper. Dredge chicken in butter and then in panko, pressing to adhere.

3. Brown Chicken: Heat 1 tablespoon olive oil in a cast-iron skillet. Brown chicken 2 to 3 minutes on each side.

4. Finish Chicken: Season crushed tomatoes with ¼ teaspoon each salt and pepper. Spoon crushed tomatoes onto chicken. Top with basil leaves (reserve a few for garnish) and sprinkle with cheese. Bake 10 minutes or until chicken is done.

5. Make Arugula Salad: While chicken bakes, whisk together vinegar and 2 tablespoons olive oil in a medium serving bowl. Season with salt and pepper to taste. Add arugula and toss to coat.

To Serve: Divide chicken and salad evenly between serving plates. Top chicken with reserved basil leaves.

Pro Tip:

Dress the arugula just before serving.
