Would you rather do the cooking, or have a party catered?

What To Do:

1. Heat a lightly oiled grill or grill pan to medium high.

2. Liberally season both sides of steak with salt and pepper.

3. Cook Steak: Place the steak on the hot grill and cook until browned on the underside (about 2 minutes). Turn over and continue cooking until desired doneness/temperature is reached when tested with a meat thermometer (see Pro Tip). Allow to rest while making salad.

4. Prep Salad: While the steak is cooking, finely dice jalapeno. Roughly chop parsley. Cut lime in half.

5. Make Dressing: In a medium mixing bowl, whisk together 1 teaspoon canola oil, honey, juice from lime, only ¼ teaspoon of the cumin (save the rest for another use), ½ teaspoon salt and ¼ teaspoon pepper.

6. Mix Salad: Into the dressing mixture, fold in the corn, jalapeno, radish, parsley and red onion.

To Serve: Place steak on plate and spoon corn salad over.

Temperatures for steak doneness: rare/ 125-130°F, medium rare/130-140°F, medium/140-150°F, medium well/ 150-155°F, well done/why bother?
