1. Prepare chicken for slow cooker: Sprinkle chicken with ONLY 2 teaspoons curry powder and ¼ teaspoon each salt and pepper

2. Prepare vegetables for slow cooker: Toss sweet potatoes and onion with 1 tablespoon olive oil, ginger, garlic, and ¼ teaspoon each salt and pepper in a 3- to 4-quart slow cooker coated with vegetable cooking spray. Top with chicken and grapes. Cover and cook on LOW setting 6 to 7 hours

3. Prep garnish: Chop parsley.

4. Make couscous: In a medium saucepan over medium heat, heat 1 teaspoon olive oil. Add couscous; cook 1 minute or until toasted. Add 1 cup water and Σ teaspoon salt. Cover, reduce heat, and simmer 10 minutes or until liquid is absorbed. Fluff with a fork.

To Serve: Divide couscous among serving plates. Top with chicken tagine. Sprinkle with parsley.

Pro Tip:

If you aren’t in a hurry, brown the chicken thighs before adding to the slow cooker. Doing so adds an extra depth of flavor.
