1. Chicken may arrive slightly frozen. Thaw as needed.

2. Prep Ingredients: Stir together pico de gallo, black beans and corn in a small bowl. Coarsely chop cilantro. Cut limeinto wedges.

3. Brown Chicken: Sprinkle chickenwith ½ teaspoon each salt and pepper. Heat 2 tablespoons olive oil in a large skillet. Cook chicken 3 to 4 minutes on each side or until browned.

4. Finish Dish: Surround chicken with pico de gallo mixture. Top chicken with shredded cheese. Cover and cook 2 more minutes or until chicken is done and cheese is melted.

To Serve: Serve right from the skillet. Sprinkle chicken with cilantro and squeeze with lime juice. Season with salt and pepper to taste.

Pro Tip:

To prevent the chicken from sticking to the pan, make sure the oil is very hot before adding the chicken to the pan.
