What To Do:
1. Cook Couscous: In a medium saucepan over medium heat, heat 1 teaspoon olive oil. Add couscous; cook 1 minute or until toasted. Add 1 cup water and ¼ teaspoon salt. Cover, reduce heat, and simmer 10 minutes or until liquid is absorbed. Fluff with a fork.
2. Make Marinade: Cut lemon in half. Cut one half of lemon into thin slices and set aside. Grate zest from remaining half and squeeze juice. Place in a small bowl and whisk in ONLY 1 teaspoon thyme, 2 tablespoons olive oil, and ½ teaspoon each salt and pepper.
3. Prepare Kabobs: Thread zucchini, squash, and red onion onto provided wooden skewers.
