What To Do:

Lamb Chops with Greek Orzo Salad - Step 1

1. Cook Orzo & Toast Pine Nuts: Bring a small saucepan of generously salted water to a boil. Stir in orzo. Cook until just tender, 8 to 10 minutes. Transfer to a mixing bowl to cool. Heat a large heavy skillet over medium-high. Add pine nuts. Toast, stirring often, about 2 minutes. Remove from skillet and set aside.

2. Cook the Lamb Chops: Season lamb chops with salt and pepper. Add lamb chops to skillet. Sear to medium-rare inside and deeply browned outside, turning once, about 4 minutes per side. Transfer to a plate, cover with foil, and let rest 5 minutes. Thinly cut lamb and add to mixing bowl with orzo.

3. Prepare the Orzo Salad: Halve tomatoes. Add to bowl with orzo. Chop dill. Add to bowl with orzo. Stir 1 ½ packets Lemon Garlic into lamb & orzo mixture. You won't use all of the Lemon Garlic.

To Serve: Divide lamb & orzo mixture between two bowls. Dot top of each with goat cheese. Sprinkle each with toasted pine nuts for crunch and garnish.
