What To Do:
1. Cook Orzo & Toast Pine Nuts: Bring a small saucepan of generously salted water to a boil. Stir in orzo. Cook until just tender, 8 to 10 minutes. Transfer to a mixing bowl to cool. Heat a large heavy skillet over medium-high. Add pine nuts. Toast, stirring often, about 2 minutes. Remove from skillet and set aside.
2. Cook the Lamb Chops: Season lamb chops with salt and pepper. Add lamb chops to skillet. Sear to medium-rare inside and deeply browned outside, turning once, about 4 minutes per side. Transfer to a plate, cover with foil, and let rest 5 minutes. Thinly cut lamb and add to mixing bowl with orzo.
