What To Do:

1. Pork may arrive slightly frozen. Thaw as needed.

2. Cook Sweet Potatoes: Add sweet potatoes to a small sauce pan and cover with salted water. Cook over high until fork tender (15-20 minutes). Drain and roughly mash with a fork. Salt and pepper to taste.

3. Cook Red Cabbage: While sweet potatoes are cooking, start cabbage and pork. In a medium skillet over medium-high heat, add 2 teaspoons olive oil, cabbage and a pinch of salt and pepper. Cook, stirring, JUST until red cabbage begins to soften. Stir in vinegar and remove to a bowl. Wipe out skillet.

4. Cook Pork: Cut pork tenderloin into 1-inch thick slices (medallions). Sprinkle lightly with salt and pepper. In the same skillet over medium-high heat, add 1 tablespoon olive oil. When hot, add pork medallions and cook (turning once) JUST until cooked through (about 6-8 minutes). Remove to a plate to rest.

5. Make Honey Pecan Sauce: Place skillet back over low heat and add butter, 1 tablespoon of olive oil, honey and pecans. Stir for 30 seconds (making sure to stir up all the good bits from the bottom of the pan).

To Serve: Divide sweet potatoes between two plates. Top with red cabbage and pork medallions. Spoon honey pecan sauce over pork.

Pro Tip:

Heat a mixture of butter, honey and pecans to spoon over bananas or ice cream for a quick dessert.
