Coffee Pairings by @terraskitchen

We like a flavorful full-bodied coffee with pineapple like a Jamaican Blue Mountain variety.

TK Table Talk:

Who was the last person you said “I love you” to?

What To Do:

1. Preheat oven to broil. Line a baking tray with aluminum foil and set aside.

Honey Caramelized Pineapple with Mint Yogurt Sauce - Step 1

2. Cook Pineapple: Add the pineapple, honey and 1 teaspoon oil to a medium mixing bowl and stir gently to coat. Spread pineapple in a single layer onto the prepared baking tray and broil until charred in spots (about 10-12 minutes).

Honey Caramelized Pineapple with Mint Yogurt Sauce - Step 2

3. Make Sauce: Finely chop ONLY half of the mint (use the other half in your morning smoothie or a tiny mojito!) and stir into the yogurt. Place in freezer.

To Serve: Remove yogurt from the freezer and stir. Divide charred pineapple between two bowls and top each with a dollop of yogurt.

Pro Tip:

Add some zing. Add a little lime zest along with the mint to the yogurt for a little extra zing!
Spice It Up: Stir a pinch of red pepper flake into the honey, oil and pineapple before you broil for an extra kick of heat!

Sure, our TK food containers are recyclable, but we’d rather you upcycle them first. We’re partial to using them to sprout our garden seeds, but we’d love to see how creative you are! Tag us in your photos with @terraskitchen and #terraskitchen.
