What To Do:
1. Preheat oven to broil. Line a baking tray with aluminum foil and set aside.
2. Cook Pineapple: Add the pineapple, honey and 1 teaspoon oil to a medium mixing bowl and stir gently to coat. Spread pineapple in a single layer onto the prepared baking tray and broil until charred in spots (about 10-12 minutes).
3. Make Sauce: Finely chop ONLY half of the mint (use the other half in your morning smoothie or a tiny mojito!) and stir into the yogurt. Place in freezer.
To Serve: Remove yogurt from the freezer and stir. Divide charred pineapple between two bowls and top each with a dollop of yogurt.
