What To Do:

Hearty Sweet Potato Chili

1. Prep the Ingredients: Chop the onion. Cut the sweet potato into smaller chunks if larger than a bite.

2. Separate jalapeño from cilantro. Finely chop jalapeño and coarsely chop cilantro (you’ll thank us later for this step).

3. Brown the Ground Beef: Heat 1 tablespoon oil in a large saucepan over medium-high heat. Add ground beef, trinity mix and onion. Cook 5 minutes or until beef is browned.

4. Finish the Chili: Add the garlic, sweet potato, tomatoes, ONLY 1 tablespoon chili powder, ONLY 1 teaspoon cumin, 1 teaspoon salt, and 2 cups water to the saucepan. Bring to a boil. Cover, reduce heat, and simmer 12 to 15 minutes or until potatoes are tender.

To Serve: Divide the chili between 2 bowls. Sprinkle with jalapeño and cilantro.

Pro Tip:

This chili is very versatile; sub any ground meat or leave out the meat and make it vegetarian.
