Wine Pairings by @grapefriend

A Torrontés with its white peach and lemon zest notes will pair well with the juicy pineapple.

A Belgian Wit is a great choice to highlight the sweet pineapple salsa in these tacos.

4. Cook Chicken: Sprinkle chicken with ¼ teaspoon salt and pepper. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add chicken and cook 2 to 3 minutes on each side or until browned and almost done. Reduce heat to medium and add sauce. Cook 1 more minute or until sauce is syrupy. Let chicken rest 5 minutes before slicing.

5. Char Tortillas: Heat tortillas by placing directly over a gas burner or under a broiler until blackened in places on both sides. PLEASE don’t skip this step, you’ll be missing out on big flavor.

To Serve: Divide chicken and spinach evenly between tortillas. Top with salsa.

Pro Tip:

Take this recipe outside! Grill the chicken and baste with the sauce. Also, try grilling the tortillas!
Spice it Up!: Add some crunch with chopped, toasted macadamia nuts.
