What To Do:

1. Chicken may arrive slightly frozen. Thaw as needed.

2. Make Salsa: Chop pineapple, jalapeño and cilantro. Stir together with red onion, ONLY half of lime juice, ¼ teaspoon salt and pepper, and 2 teaspoons vegetable oil in a small bowl.

3. Make Sauce: Stir together remaining lime juice, tamari and honey in a small bowl.

4. Cook Chicken: Sprinkle chicken with ¼ teaspoon salt and pepper. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add chicken and cook 2 to 3 minutes on each side or until browned and almost done. Reduce heat to medium and add sauce. Cook 1 more minute or until sauce is syrupy. Let chicken rest 5 minutes before slicing.

5. Char Tortillas: Heat tortillas by placing directly over a gas burner or under a broiler until blackened in places on both sides. PLEASE don’t skip this step, you’ll be missing out on big flavor.

To Serve: Divide chicken and spinach evenly between tortillas. Top with salsa.
