What To Do:
1. Cook Pasta: Bring a medium sauce pan with salted water to a boil. Stir in penne and boil for 6 minutes. Reserve ½ cup pasta water. Drain pasta and return to the pot.
2. Prep Zucchini: While pasta is cooking, slice the zucchini length wise. Brush cut side with olive oil and sprinkle with salt and pepper.
3. Grill Zucchini: Place a lightly oiled grill pan over high heat. When hot, add zucchini cut side down and cook until charred grilled marks appear. Remove to a cutting board and cut into bite-sized pieces.
4. Chop, Zest and Cut: Finely chop the parsley and dill together. Zest half of a lemon. Cut lemon in half.
