Wine Pairings by @grapefriend

Clean, crisp, clear, the 3 c’s are your guide when pairing with a creamy dish. Sauvignon Blanc fits the description of all three! Check, check and check!

Beer Pairings

Wheat beers are best with a goat cheese dish. We’re digging on a Hefeweizen.

What To Do:

Grilled Zucchini and Creamy Penne - Step 1

1. Cook Pasta: Bring a medium sauce pan with salted water to a boil. Stir in penne and boil for 6 minutes. Reserve ½ cup pasta water. Drain pasta and return to the pot.

2. Prep Zucchini: While pasta is cooking, slice the zucchini length wise. Brush cut side with olive oil and sprinkle with salt and pepper.

Grilled Zucchini and Creamy Penne - Step 2

3. Grill Zucchini: Place a lightly oiled grill pan over high heat. When hot, add zucchini cut side down and cook until charred grilled marks appear. Remove to a cutting board and cut into bite-sized pieces.

4. Chop, Zest and Cut: Finely chop the parsley and dill together. Zest half of a lemon. Cut lemon in half.

5. Toast Pine Nuts: In a small sauté pan over high heat, add pine nuts and cook until JUST beginning to brown, stirring often. Remove from pan and set aside.

6. Make Sauce: Into the pot of pasta over medium-low heat, add the reserved pasta water, goat cheese, zest and juice of half a lemon (use the remaining half to freshen your disposal), parsley, dill, 1 teaspoon salt and ½ teaspoon pepper. Cook, stirring, until goat cheese has melted.

Grilled Zucchini and Creamy Penne - Step 4

7. Stir in Zucchini: Yep, just stir it in until fully coated with sauce.

To Serve: Divide zucchini pasta between two bowls. Sprinkle tops with parmesan and toasted pine nuts.
