What To Do:

1. Cook Chicken: Season chicken liberally with salt and pepper. Heat a lightly oiled grill or grill pan to high heat. Add chicken and cook, turning once, until cooked through (about 5-6 minutes per side). Remove from heat and allow to rest.

2. Finely chop the shallots (yep, they’re already chopped, but cut them up some more). Zest lime. Cut lime in half.

3. Make Dressing: In a medium mixing bowl, whisk together the lime zest and juice, shallots, honey, vinegar, 2 teaspoons olive oil, ¼ teaspoon salt and teaspoon pepper.

4. Finish Salad: Add radish, apples and arugula into the dressing. Toss to coat.

To Serve: Slice chicken and serve salad on the side. Garnish with goat cheese.
