What To Do:
1. Chicken may arrive slightly frozen. Thaw as needed.
2. Cook the Chicken: Brush or rub a grill pan with the canola oil or spray with a non-stick cooking spray and place over high heat. Salt and pepper the chickentenders and place on the hot grill. Cook until juices run clear, turning once (about 10-15 minutes). Remove to a plate and allow to rest for 5 minutes.
3. Make the Avocado Goat Cheese Sauce: Cut and pit the avocados and scoop the flesh into the bowl of a food-processor or blender. Add goat cheese, goat cheese crumbles, packagedlime juice, 3 tablespoons water and ½ teaspoon cumin. Process until smooth (for a chunkier sauce, use a mixing bowl and fork). Season to taste with salt and pepper.
