What To Do:

1. Cod may arrive slightly frozen. Thaw as needed.

2. Preheat oven 450°F. Line a baking sheet with alumnium foil and set aside.

3. Prep Ingredients: Thinly slice lemon into rounds, coarsely chop parsley and break any large pieces of broccoli into smaller pieces.

4. Roast Broccoli: Arrange broccoli in a single layer on prepared baking sheet. Toss with 1 tablespoon olive oil and ½ teaspoon each salt and pepper. Bake 15 minutes or until broccoli is browned and tender.

5. Make Seasoning Mixture: While broccoli roasts, toss together 1 tablespoon olive oil, ginger, garlic, lemon slices and ½ teaspoon salt in a small bowl. Combine ONLY 2 teaspoons vinegar and 3 tablespoons water in a separate bowl.

6. Start Cod: Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Generously season cod with salt and pepper. Once the oil is smoking, add the fish and sear 3 minutes on one side. Turn fish over, move to one side of the pan and add lemon mixture to the pan. Cook 2 more minutes or until lemon slices begin to brown.

7. Finish Cod: Add vinegar mixture and parsley to pan (reserve 2 large pinches of parsley for garnish). Spoon pan sauce over fish to finish cooking. Remove fish and lemon slices and any bits from skillet. Wipe pan out with paper towel. Add rice and broccoli to the pan and stir until heated through.

To Serve: Divide rice mixture, fish and lemon slices between serving plates and garnish with reserved parsley.

Pro Tip:

Protect your pan! Use a nonstick spatula to turn the fish in the nonstick skillet.
