What To Do:

1. Preheat oven to 425° F. Put a medium sauce pan filled ¾ of the way full with salted water over medium-high heat and allow to come to a boil.

2. Cook Potatoes: Quarter potatoes and add to the salted boiling water. Cook until you can just pierce with a fork (approximately 9 minutes). Drain and set aside.

3. Cook the Steaks: In a 10-inch oven proof skillet over medium-high heat add 1 teaspoon olive oil. Liberally salt and pepper the steaks. Add steaks to the skillet and sear until browned on the underside (about 2 minutes). Turn over and transfer skillet to the preheated oven. Cook until desired doneness/temperature is reached when tested with a meat thermometer (see Pro Tip below for doneness/ temperature chart). Allow to rest.

4. Cook Mushrooms: In a medium skillet over medium heat, add 3 tablespoons olive oil and garlic. Cook, stirring, for 1 minute. Add mushrooms, ¼ teaspoon salt and ¼ teaspoon pepper. Cook, stirring often, until mushrooms are tender and juicy (approximately 5 minutes). Remove garlic mushrooms to a bowl and set aside.

5. Finish Potatoes: Place skillet back on the stove over medium-high heat. Add 1 tablespoon of the steak pan juices, potatoes, ¼ teaspoon salt, ¼ teaspoon pepper and scallions. Toss to coat and cook for 2 minutes.

To Serve: Spoon garlic mushrooms over steaks and serve scallion potatoes alongside. Drizzle with any remaining pan juices.

Pro Tip:

Temperatures for steak doneness: rare/ 125-130°F, medium rare/130- 140°F, medium/140-150°F, medium well/ 150-155°F, well done/why bother?
