What To Do:
1. Prep Ingredients: Grate zest from lemon and squeeze juice. Reserve a few parsley leaves for garnish. Chop remaining parsley.
2. Make Chutney: Heat 2 teaspoons olive oil in a small saucepan. Add red onion, ginger, and ONLY half of garlic, and sauté 4 minutes. Add mango, ONLY 2 teaspoons lemon juice, and ONLY ½ teaspoon each cumin and coriander. Reduce heat and simmer 3 minutes or until mixture is thickened. Season with salt and pepper to taste.
