What To Do:

Crispy Shrimp Salad - Step 1

1. Make the Dressing: Whisk together ONLY 1 teaspoon curry powder, mustard, honey, mayonnaise, ONLY 2 teaspoons vinegar, and 2 tablespoons olive oil in a small bowl. Salt and pepper to taste.

2. Place shrimp on a layer of paper towels and pat dry with additional paper towels.

3. Cut mango into smaller pieces.

4. Prepare the Shrimp Melt the butter in a medium bowl in the microwave at high 30 seconds.

5. Prepare the Shrimp Toss shrimp with the melted butter. Place the panko on a shallow plate.

6. Coat the shrimp in panko on both sides and place on a greased, foil-lined rimmed baking sheet.

7. Cook the Shrimp Preheat the oven to broil. Broil the shrimp 3 to 4 minutes or until browned and crisp.

To Serve: Arrange arugula, red pepper, mango, and red onion on a serving platter. Top with shrimp and drizzle with dressing, or serve dressing on the side.
