Crispy Sesame Tofu + Bok Choy Stir-Fry - Step 1

1. Prepare Tofu: Place tofu on a paper towel-lined cutting board and cover with paper towels. Place a heavy saucepan or skillet on top of tofu and place several cans or other heavy objects inside. Let stand 10 minutes to release excess moisture from tofu.

2. Cook Rice: In a medium saucepan over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in rice and return to a boil. Reduce heat to low, cover and simmer 15 minutes. Turn off heat and let stand, covered, for 5 minutes. Fluff with a fork and stir scallions into rice.

3. Cut Tofu into 1-inch squares.

4. Prepare Sauce: Whisk together tamari sauce, ONLY ¼ teaspoon crushed red pepper (add more if you like it spicy), honey, garlic, sesame oil, 1 teaspoon vegetable oil, 1 tablespoon all-purpose flour and ¼ cup water in a small bowl.

5. Stir-fry Tofu and Vegetables: Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add tofu. Sauté 5 minutes or until browned on all sides. Add bok choy, carrots and sauce. Cook 3 minutes or until bok choy is tender and sauce is thickened.

To Serve: Divide rice between 2 plates and top with stir-fry.

Pro Tip:

A cast-iron skillet is the perfect hands-off tool to use to press the moisture out of the tofu. Use it in place of the heavy saucepan and cans.
