1. Cook fish: Lightly salt and pepper both sides of cod. In a nonstick sauté pan over medium-high heat, add 1 tablespoon canola oil. When oil begins to shimmer, add cod (“skin” side down). Cook, turning once, until cod is opaque throughout and golden on the outside (about 4 to 6 minutes per side).

2. Make dressing: While cod is cooking make dressing and prep salad. Grate zest from lime and squeeze juice. In a medium mixing bowl, stir together lime zest, ONLY half of lime juice, ONLY ¼ teaspoon cumin, and 2 tablespoons canola oil.

3. Prep salad: While cod is cooking, chop cilantro and run a knife through any large chunks of mango, radish or red onion, if desired.

4. Finish salad: Just before serving, add radish, mango, cilantro, red onion, and arugula to lime dressing and toss gently.

To Serve: Place a piece of the crispy cod on each plate and squeeze lime juice over the top. Top with salad.

What??? Not into cod? This mango salad is the bomb with any protein and even tastes amazing tossed in leftover pasta.
Spice it Up!: Add a heavy pinch of ancho chili powder to the lime dressing. Ancho chiles have a mild heat and sweet fruity flavor.
