What To Do:
1. Cook Pasta: In a medium sauce pan
over medium-high heat, add water and
2 teaspoons salt. Bring to a boil. Stir in
orzo and boil, stirring occasionally, until
al dente (about 6 minutes). Drain pasta
and return to the pot. Stir in 2 teaspoons
olive oil, cover and set aside.
2. Cook Ground Chuck: While orzo
is cooking, add the ground chuck to a
medium sauté pan over medium-high
heat. Liberally salt and pepper. Cook,
breaking up with a spatula, until cooked
through and just beginning to brown.
Using a slotted spoon, remove ground
chuck to a bowl and set aside. Remove
all but 1 tablespoon of the renderings
from the skillet.
3. Sauté Leeks: Chop the leeks. Place the
pan with the renderings over mediumhigh
heat and add leeks. Cook, stirring,
for 1 minute. Stir the leeks into the orzo.
